Barbecue Spare Ribs Recipe
Are the barbecue spare ribs at Sylvia’s in Harlem any good.?
I have a recipe and the recipe seems a little odd. It consists of pouring about 2 cups of vinegar over the ribs and baking 1-1/2 hours as the first step. I am a little hesitant to waste several slabs of ribs if they do not even taste good at the restaurant.

The vinegar tenderizes the proteins in the meat. You won’t taste the vinegar. I always do that at home.
Sylvia’s is pretty good. 1 1/2 hour, that’s all? I’d slow cook at 275 for 3 hours and finish them on the grill. slather on the barbeque sauce and serve. Coleslaw, corn, 3 bean salad on the side. Pass the corn bread.
