Barbeque Ribs Recipe
What are some Spanish BBQ cookbooks?
I am a bbq aficionado, especially of foreign versions of “barbeque”. Basically I consider anything that has been cooked over a wood fire in a traditional style of that culture their version of barbeque. There’s China’s “char sui” or Korea’s “bulgogi” or “gogi gui”, and of course there’s tandoori and persian grill kebab and things like that. My question is about Spain’s barbeque tradition. I’m relatively familiar with Spanish cuisine but I haven’t been able to dig up any sort of meat traditionally cooked over a wood fire. I have heard of “cocina de costillo” but apparently that is just the word for rib (costilla).
Does anyone know what a good example of Spanish bbq is, or any recipes/cookbooks???

what you consider BBQ is not the traditional use of the word for most of the US, this is considered grilling… BBQ is to cook for extended periods usually with a smoker.
that being said, spanish cuisine more concentrates on stewed & baked foods… very few grilled, or cooked over direct fires.
i would say that you won’t be able to find much in the way of books for grilling spanish foods because of this.
