Help! I’m going to live in my garage for three weeks and I have to eat!?
My husband and I are moving a new home onto our land and will have to live in our garage for three to four weeks while the new house is set up. We will have a microwave and a mini fridge and a barbeque grill. I will probably only be able to make two trips to the grocery store. I’m looking for quick, easy meals that aren’t sandwiches. The other issue is that I have an allergy to dairy so I have to have dairy free recipes. Any ideas would be appreciated!
Could stock up on canned, potato, pasta, rice items to be heated in the microwave. Buy chicken, fish and beef when you need it. Microwaved baked potatoes with toppings (veggies and/or meat) makes a good meal.
Here’s my recipe:
Tasty, High fiber, black beans and brown rice
can of S&W Caribbean Black beans (has Red Bell Pepper, Anaheim Chili Peppers,Diced Onion & Lime, Juice in Caribbean Sauce)
can of mexican stewed tomatoes (has green pepper and onion)
chili paste (tablespoon of Huy Fong Sambal Oelek, Chili Paste)
Uncle Ben’s Brown Rice (Microwave in bag)
Drain juice from cans and add 1-2 tablespoons cornstarch, mix
Cook beans, tomatoes till bubbling. If you would like it thicker and more sauce, add cornstarch mixture, stir till the sauce comes out clear.
Meanwhile, microwave brown rice for 90 seconds. Place beans mixture on top or mix together. This makes 2 servings.
