Good recipe for Eggplant preferably on the BBQ?
Bought an eggplant cause they were on sale. Haven’t had it since I was a kid at a friends house. I know you can fry it but any ideas for the BBQ. We’re grilling tonight anyway.
BBQ eggplant Recipe
Ingredients:
eggplant, sliced 1/2 inch
olive oil, or lo-cal salad dressing
club house garlic seasoning
dried vegetable seasoning
Directions:
Mix oil and seasonings in bowl
brush on sliced eggplant
sprinkle with extra seasoning if desired
bake in hot bbq until grill marks show, then turn over, about 2 minutes each side
good hot or room temperature red peppers done same way are great too
