Bbq Meat Smoker
Offset smoker BBQ question?
I’ve got one of those $150 black offset smokers that you see for same at Lowe’s and Home Depot. I maintain about 230 degrees and smoke up ribs and chicken and pork butt. I’ve got a couple of BBQ cookbooks, I make my own rubs and sauces and probably have 4 or 5 different kinds of wood I use depending on what I’m cooking. OK, the question, How close or far away from the opening to the wood section should I keep any meats away from. I mean, if I put the meat all the way over to the right, right by the opening to the firebox am I risking grilling the meat instead of smoking it? The only reason I ask is because my whole pork butt usually cooks in 7-8 hours and the cookbooks I have say that at 230 degrees that the butt should take 12 hours. Still taste’s awesome, but should I keep the meat away from the opening?
Low and slow is the key… first things first buy an oven thermometer like the one linked here http://www.cooking.com/products/shprodde.asp?SKU=601726&ref=http%3A%2F%2Fsearch.yahoo.com%2Fsearch%3Ffr%3Dytff1-yff2%26p%3Doven%2520thermometer%26ei%3Dutf-8%26type%3D. Don’t trust the thermometer gauge on the top of your smoker.
Light up your smoker and toss in the thermometer by the firebox opening close the door to the smoker and give it 2-5 minutes to get a reading…. then move the thermometer to the complete opposite side of the smoker farthest from the opening and take another reading after 2-5 minutes. Lastly take another reading in the center of your smoker for again 2-5 minutes.
This will educate you on how hot your smoker is cooking. I suspect that when left alone the temps will be fairly the same over time except for the immediate opening by the fire box maybe a touch higher.
Pork butt depending on its size can cook in as little as 4 hours if need be if you pump the temp up but can be cooked as long as 12. I’ve even seen people smoke them for 14 hours. Long story short if your happy with 8 hours then don’t change a thing but I can attest that 12 hours is fine as well.
