I have a brinkman gourmet smoker and I am looking for help.?
I NNED IDEAS THAT YOU HAVE FOUND THAT WORK.AMOUNT OF CHARCOAL,WOOD??
ANY CHICKEN RUBS THAT DONT JUST TASTE LIKE SALT IN THE END.HELP!!!!!!!!!!!!!!!
Jack’s Old South BBQ Rub
¼ cup brown sugar
¼ cup sweet paprika
¼ cup kosher salt
3 Tbsp. black pepper
2 tsp garlic powder
2 tsp onion powder
1 tsp cayenne pepper
1 tsp dried basil
Combine all ingredients and mix well.
Yield: 3/4 cup

As far as amt of charcoal or wood, that depends upon how long you’re going to be smoking meat. For chicken, only a couple hours, maybe half a bag of charcaol. For brisket, 10-12, so you’ll need more, but add it over the course of the cooking time; maybe 2-3 bags of charcaol.
My fave smoking wood is hickory, pecan, and applewood (if I can get it). Soak it in water for a couple hours so i tdoesn’t just burn up, but smokes and smolders.
