Brinkman Smokers
Going to smoke some jerky, any suggestions?
I have a Brinkman wet smoker and I want to make some jerky! I need toy know what to marinade it in for how long and how long to smoke it? Also any other tips.
Dry brine it in brown sugar and coarse salt. half and half use LOTS. Pack it tight on both sides of meat slices and keep piling. When you have covered it all, put a pan on it that would cover the whole surface and put at least a couple of bricks on it to weigh it down pressing on the meat. After 12 hours take meat and rinse then put on a rack to dry a bit before drysmoking it.
