Brinkmann Meat Smoker
My meat smoker can’t get hot enough?
I add more coals, more wood, everything – what can I do to bring the temperature up?
It’s a charcoal Brinkmann smoker, if that makes a difference.
I know they don’t get extremely hot. Mine isn’t getting above 200 degrees, which isn’t even hot enough to smoke.
You must be using the Brinkman smoker with the side coal box for indirect heat smoking? What temp is it getting to? For smoking purposed you want the tempature range to be between 225-270 depending upon product being smoked. If your smoker is not reaching that range, then you will need to play around with the vents on the smoker. You have one vent near the cola box that allows air in to the fire, and on other end you should have a vent for allowing smoke to escape. Try opening the coal vent more, and closing the exhaust vent to almost completely closed. This will help build up the heat in the smoker. You will need to keep an eye on this, and adjust accordingling to keep the temp in the right range. I suggest buying a remote thermometer (about $20) that will set off an alarm if the temp exceeds a pre-set tempature you put in it. Closing the cola vent once your coals (either charcoal or wood) are now embers will also help in increasing the temp. Play around with different configurations till you get the right ventilation through the smoker to maintain the heat you want. If your trying to use this as a grill instead of a smoker, then place coals inside smoking chamber instead of side box. Hope this helps.
