Grilling Techniques

grilled pork roast?

I have a 7 lb. boneless pork butt roast I want to attempt to cook on the grill. Was wondering how to go about this. I have a gas grill, and can create indirect heat as i have 2 burners. Any tips, techniques, or recipe ideas would be great. We like sweet, and have glazed oven roasted pork before with peach preserves and was awesome. Just wondering how we culd re-create this dish on the grill. Thank You For the Help.

PORK CHOP ROAST WITH HONEY SWEET
POTATOES

3 lg. sweet potatoes, cooked, peeled & halved
6 pineapple slices
6 green pepper rings, cut 1/4″ thick, cleaned, white membrane removed
6 onion slices, cut 1/4″ thick
6 pork chops
1/4 c. sifted flour
2 tsp. salt
1/8 tsp. pepper
2 tsp. fat
1 tbsp. prepared mustard
1 tbsp. brown sugar
1/2 c. pineapple juice
1/2 c. honey
3 tbsp. melted butter

1. Set out a large heavy skillet and a large shallow baking dish.
2. Coat pork chops with a mixture of the flour, salt and pepper.

3. Heat the fat in the skillet over medium heat. Brown chops on both sides.

4. Arrange pork chops in baking dish.

Spread chops with the mustard and brown sugar. Top each chop with a pineapple slice, green pepper and onion slice. Pour pineapple juice over chops.

5. Coat sweet potatoes with a mixture of the honey and melted butter. Arrange cut side up around chops in baking dish. Cover.

6. Bake at 350 degrees for about 1 hour or until meat is tender and thoroughly cooked. (To test for doneness, cut slit near bone, no pink should be visible.)

ROAST PORK

A cut of pork, 4-5 lb. from the hind leg
6 parsley stalks
1 tbsp. bacon drippings
1 c. water
1 cooking apple

With a sharp knife score the skin around the joint so that this will afterward produce the crackling and also make the joint easier to carve. Push a few short parsley stalks into the pink flesh with your thumb.
Rub the bacon drippings into the scored skin to encourage it to crisp.

Put the joint in the roasting pan with the water and the whole apple.

Bake in a hot oven (400 degrees) allowing 35 minutes to the pound. Reduce the heat in the last hour. These joints take 2 1/2 to 3 hours. The water helps to keep the joint moist. If it dries up add more.

CHEESE STUFFED PORK ROAST

3 lb pork roast

Stuffing Mixture:

4 oz cream cheese, softened
1/2 c. shredded sharp cheddar
3 green onions, chopped
4 slices sun dried tomatoes, chopped
1/2 green bell pepper, chopped
1 tsp minced fresh garlic
1 tsp sweet dried basil
2 tsp parsley
pinch of cayenne pepper
chipotle hot sauce to taste

Other:

1/3 c. chicken broth or stock
1/3 c. dry white wine
3 tablespoons dried chives
2 tsp sweet basil
salt and pepper to taste

1. Combine stuffing ingredients in food processor and pulse just until blended. Refrigerate for about 1 hour.
2. Slice open the roast so it lays out flat.

3. Generously spread the stuffing mixture on the inside of the pork roast. Roll up the roast and tie ends securely.

4. Preheat oven to 350F. In a casserole dish add the chicken broth and white wine. Place the roast in the casserole dish. Season the top of the roast with dried chives, sweet basil and salt and pepper.

5. Bake roast for approximately 1-1/2 hrs. or until pork roast is done and no longer pink, basting occasionally with the broth/wine mixture.

(Note: some of the stuffing will cook out into the broth/wine sauce which only adds to the flavouring.)

Add more chicken broth and white wine as necessary.

6. To serve: slice pork roast and serve with any remaining pan juices including any stuffing which may have cooked out of the roast.

PINEAPPLE GLAZED GRILLED PORK CHOPS
(OR CHICKEN)

8 medium sized pork chops about 1/2 to 3/4 inch thick
1 can pineapple rings, drained (reserve juice)
1 1/2 tbsp. dark brown sugar
1/4 cup prepared mustard
2 tbsp. lemon juice
2 tbsp. Worcestershire sauce
2 tbsp. cornstarch dissolved in 1/4 cup cold water
enough water to bring reserved juice to one cup

Drain pineapple and reserve juice. Salt and pepper pork chops to taste.
In a small sauce pan combine pineapple juice,

HONEY GRILLED PORK CHOPS

8-10 extra thin sliced pork chops
2 cups honey (use more if needed)
soy sauce

These chops may be grilled or baked in the oven. Grilling on the BBQ is the best.
Pour honey into a bowl. Add soy sauce, stirring until sauce is a syrupy consistency. Place chops in a bowl or cake pan and cover with 1/2 of the sauce. (Place balance of sauce in a sauce pan.)

Let the chops marinate in refrigerator for as long as you wish. They can marinate all day for a stronger flavor or they can be dipped and grilled. Either way works.

Simmer the sauce in the saucepan over low

ZESTY GRILLED PORK CHOPS

3/4 c. soy sauce
1/4 c. lemon juice
1 tbsp. chili sauce
1 tbsp. brown sugar
1 garlic clove, minced
6 rib or loin pork chops, about 1 1/2″ thick

Combine the first five ingredients. Place chops in glass baking dish and pour marinade over. Cover and refrigerate 3 to 6 hours or overnight. To cook, remove chops from marinade and grill or broil 4 inches from the heat to desired doneness. Brush occasionally with the marinade.
