Vertical Meat Smoker
Smoking a beef brisket?
I’ve got a GOSM Smoker…vertical smoker. Its the smaller one so about 16″ square. My question is, because of the smoker dimensions a 10lb brisket will not fit properly into the smoker. Can I cut the brisket in half to accomodate my size restraint without fully effecting the cooking of the meat.
Not familiar with your smoker in particular but I have cut a brisket in half before just to use two different rubs and the smoking time didn’t seem to change any using my pitmaster regulating the temperature to no more than 250. Hope that helps.
