Smoke pouches on gas grills?

Okay, Rob Rainford smokes meat on a gas grill. I know that he turns the gas on, only on one side for indirect heat, but, what I’m wondering is, when he puts his wet and dry wood chips in a foil pouch, punches holes in both sides and lays it in the heated side, is he laying the pouch directly on the gas fire? Will this not catch fire? We’ve never smoked on the grill before, just used a smoker. Any of you grillers or smokers, I’m ready for direction. I would love to try this. Also, where do you get the apple and cherry wood chips? (I found this question on Discover Cooking.com from “texasgirl” but there was no answer. I have always wondered myself, as it would be so much easier to regulate heat in a gas grill than a charcoal smoker. I have both, but hardly ever would use the smoker if I could use the gas grill.

I do this all the time as I’m too cheap to buy a smoker. You can buy the chips anywhere (usually) you buy BBQ essentials – Wal-Mart (I say that as no matter your country, they are there) and stores like that in your region. They don’t catch fire as you soak them for an hour in water before you put them in your foil pouch. You could buy the fancy cast iron box for your chips but by the time the box heats up and then your chips heat up, you’re out of gas! The tinfoil pouch works just fine and takes less time to heat. I put my chips on the grill when I preheat my grill, wai for the smoke to roll, then quickly get my meat on and shut the lid. Just like with a smoker you don’t want to needlessly open the lid to prod the meat as you lose that nice smoke. I don’t know where you can find those chips but if you phone your local dealer that sells smokers, I’m sure they can tell you or order them in for you! I’ll be honest though, my fave is charcoal grilling pellets. I like the Jack Daniels Grilling pellets myself. You basically do the same thing except you don’t soak them as they are charcoal bits. Just put in the pouch, poke a few holes and heat the same as above. Mmmmm, you’e made me hungry for BBQ ribs and where I live it’s -45 with the windchill. Not even BBq weather by my standards and I BBq all through winter! Good luck!
